Recipe:
Slice tomatoes and spread them on a cookie sheet covered in foil paper for easy clean up. Drizzle olive oil over tomatoes and sprinkle with salt, pepper, sugar, rosemary and thyme. Mix with hands. Cut the top of a garlic head, drizzle with oil and bake for 45-55min at 375 degrees. Puree roasted tomatoes and garlic. I used one garlic head with three cookie sheets worth of tomaotes.

for dinner we enjoyed trader joe's organic tomato red pepper soup to keep with the tomato theme. on the right is the tomatoes and garlic pureed. |
